Ingredients and method
Ingredients: Chicken 600 g; short-grain jeeraga samba rice 500 g; mint and coriander 1 handful each; onions 2; green chillies 3; ginger-garlic paste 2 tbsp; curd 150 g; whole spices, oil and salt.
- Rinse and soak the rice for 20 minutes. Blend mint, coriander, chillies and ginger-garlic paste into a coarse herb masala.
- Fry onions and whole spices. Add chicken, herb masala, curd and salt; cook until the chicken is almost done.
- Stir in drained rice and measured hot water. Cover and cook on low heat until the rice is tender and the chicken is fully cooked.
- Rest the pot covered for 10 minutes before gently fluffing.
