Ingredients and method
Ingredients: Basmati rice 500 g; onions 2; mint and coriander 1 small handful each; whole spices; ghee 2 tbsp; a pinch of saffron soaked in warm water; salt.
- Rinse and soak the rice for 30 minutes. Fry sliced onions until golden.
- Boil the rice with whole spices until about three-quarters cooked, then drain.
- Layer rice, fried onions, herbs, ghee and saffron water in a heavy pot. Cover tightly and finish on low heat.
- Rest covered for 10 minutes before gently fluffing and serving with a starter.
