Ingredients and method

Ingredients: Mutton 700 g; short-grain jeeraga samba rice 500 g; mint and coriander 1 handful each; onions 2; green chillies 3; ginger-garlic paste 2 tbsp; curd 150 g; whole spices, ghee and salt.

  1. Rinse and soak the rice. Grind mint, coriander, chillies and ginger-garlic paste to a coarse paste.
  2. Brown sliced onions with whole spices. Add mutton, herb paste, curd and salt, then cook with a little water until the mutton is tender.
  3. Add drained rice and enough hot liquid to finish cooking it; cover and simmer gently until the rice is done.
  4. Rest covered before serving, so the rice absorbs the remaining flavour.
