Ingredients and method
Ingredients: Mixed vegetables 600 g (peas, beans, carrot and potato); short-grain jeeraga samba rice 500 g; mint and coriander 1 handful each; onions 2; green chillies 2; ginger-garlic paste 1 tbsp; curd 100 g; whole spices, oil and salt.
- Rinse and soak the rice for 20 minutes. Blend herbs, chillies and ginger-garlic paste into a coarse masala.
- Fry onions with whole spices. Add vegetables, herb masala, curd and salt; cook until nearly tender.
- Add drained rice and measured hot water. Cover and simmer gently until the rice and vegetables are cooked.
- Rest covered for 10 minutes, then fluff lightly.
